Cooking Instructions

Slow Cooker Instructions

Cook for 4-12 hours on low heat. (Make sure your slow cooker is between a quarter to three quarters filled, any less and the sauce may burn. Any more and the meal may take significantly longer to cook.)

 

Boil in Bag Instructions

Boil a pot of water, then place the frozen meal bag into the pot. Cook for 30 minutes. Make sure the bag is submerged in water and not touching the pot, any plastic touching the pot will burn. CAUTION: Bag will be hot and releases hot steam when opened.

 

Instant Pot/Pressure Cooker Instructions

Cook for 10-15 minutes from frozen or 8-12 minutes thawed.

We turned this into a carnitas bowl - cooked the meat in the instant pot and then shredded. I was afraid perhaps there wasn't enough liquid to avoid the dreaded burn notice so I added a half cup of beef stock (and then thickened the sauce when finished with a cornstarch slurry). To make the bowls, add rice (we did a half cup), a quarter of the carnitas, and then top with homemade pico de gallo, followed by shredded lettuce, diced avocado, Mexican blend cheese, sour cream, sliced scallions and cilantro. Next time (and there will be a next time), I'll added a drained and rinsed can of black beans to the carnitas once I shred it. We got two meals out of the serving for one. I figure with the addition of the black beans I'd get three meals for two out of this one person portion! Adding corn to the mix would also be good.
